Poussin is a young chicken which is less than 28 days old weighing between 400-450g. Due to their age they are incredibly succulent and moist with wonderful chicken flavour. The small size means they are quick to roast compared to a whole chicken and especially easy to cook and eat when spatchcocked. They can serve two when served as whole dish or one individual looking for a feast. With a cook from raw time of maximum 40 minutes they could be great for Sunday specials or order to share offerings.

Our birds are grown on locally approved farms by our friends the Leon family in Brittany, France.

Roast poussin

  1. Season generously and rub with oil.
  2. Roast at 170°C for 45 mins till fully cooked throughout.
  3. Allow to rest for at least 10 mins before carving.
