Sous vide duck breast

  1. Preheat oven 180°C Fan (commercial oven).
  2. Remove breast form pouch and pat dry removing excess fat and jelly.
  3. Score the skin and season as desired. Place skin side down into a medium heat, lightly oiled pan.
  4. Cook for 5 mins till evenly coloured. Flip over and continue to cook for 1 min.
  5. Place on a baking tray and place in the oven for 15 mins.
  6. Allow to rest for max 5 mins. Slice and serve.
