Sous vide duck breast
- Preheat oven 180°C Fan (commercial oven).
- Remove breast form pouch and pat dry removing excess fat and jelly.
- Score the skin and season as desired. Place skin side down into a medium heat, lightly oiled pan.
- Cook for 5 mins till evenly coloured. Flip over and continue to cook for 1 min.
- Place on a baking tray and place in the oven for 15 mins.
- Allow to rest for max 5 mins. Slice and serve.
